Chocolate chip cookies

Ingredients
325g Chocolate (roughly chopped)
125g Butter
150g Soft brown sugar
1 Egg
225g Plain flour
½ tsp bicarbonate of soda
½ tsp baking powder
Pinch of salt

Preheat the oven to 160C/325F/ Gas 3. Line four baking trays with baking parchment
or bake two batches at a time on two trays.

Put 125g of the chocolate in a small bowl set over a pan of simmering water. Avoid
the bowl touching the water. When almost melted, remove from the heat, leave for a
few minutes, then sir until smooth. Leave to cool.

Whisk the butter and sugar together until a creamy texture. Then whisk in the egg,
followed by the melted chocolate.

Mix together the flour, bicarbonate of soda, baking powder, salt and beat into
the chocolate mixture. Add the remaining chopped chocolate. Form balls.
(I use an ice cream scoop to scoop the mixture onto the trays)

Leave plenty of room between balls as they will spread. Bake in the oven
for 12 minutes they will still be soft do not worry they will firm up as they cool.

When removed from the oven leave to cool for a few minutes before transferring
to a cooling rack to cool completely if you can leave them that long.

1/2 tsp Bicarbonate of soda
60g Golden syrup
2 Eggs
250g Plain flour
1tsp Ground ginger
1tsp Ground cinnamon

Cream the butter and sugar until a creamy texture, add the bicarbonate of
soda, golden syrup and eggs. Sift the flour, ginger and cinnamon then add
to the mixture and using your hands bring the mixture together with your
hands to form a ball shape. Wrap in cling film and place in the fridge for
10 mins to firm up.

On a floured surface, roll out the dough to 1/2 cm thickness.

Now taking a cookie cutter stamp out your biscuits and place on a lined baking tray.

Bake in the oven at 180c/Gas 4 for 10-12 mins.

Transfer onto a cooling rack to cool.
